Ingredient List
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 bunch kale, chopped into bite-sized pieces
  • 1 10.6-ounce package Upton’s Naturals Bar-B-Que Jackfruit
  • 4 cups cooked quinoa or rice
  • 2 cups prepared vegan mac ‘n’ cheese
  • 1 15-oz can black or kidney beans
  • 2 cups steamed broccoli florets
  • 2 cups steamed cauliflower florets


  • Barbecue sauce
  • 4 slices cornbread
Heat the olive oil in a large skillet. Add the onion and sauté for 2 minutes. Add the kale and cook until the kale is wilted.

Heat the jackfruit in a saucepan or in the microwave.

To assemble bowls, place 1 cup quinoa or rice in each bowl. Top with a portion each of kale and jackfruit, 1/2 cup vegan mac ‘n’ cheese, 1/3 cup beans, and 1/2 cup each broccoli and cauliflower florets.

Drizzle each bowl with barbecue sauce and serve with a slice of cornbread.
