  • 2 teaspoons vegetable oil
  • 1 8-ounce package Upton’s Naturals Bacon Seitan
  • 1/2 head cabbage, shredded
  • 3-4 cups salad greens
  • 1 cup shredded carrots
  • 1 cup corn kernels
  • 1/3-1/2 cup chopped roasted red peppers
  • 1 10.6-ounce package Upton’s Naturals Sweet and Smoky Jackfruit
  • 3 tablespoons chopped fresh parsley
  • 4-6 tablespoons vegan ranch dressing, or to taste
  • 4-6 tablespoons barbecue sauce, or to taste
directions
Heat the vegetable oil in a large skillet over medium heat, and pan fry the Bacon Seitan for about 2 minutes on each side. Remove from heat and chop into small pieces. Set aside to let cool.

Combine the shredded cabbage, salad greens, shredded carrots, corn, roasted red peppers, and cooled Bacon Seitan in a large salad bowl. Add the jackfruit, breaking it into bite-size pieces. Add the chopped fresh parsley and toss to evenly distribute the ingredients.

Add the ranch dressing and barbecue sauce, and toss to coat the salad, adding more dressing or sauce if desired before serving.
