  • Canola oil
  • 1/3 cup non-dairy milk
  • 1/2 teaspoon apple cider vinegar
  • 1 tablespoon cornstarch
  • 1/3 cup flour
  • 1/4 cup breadcrumbs
  • 1 teaspoons garlic powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 16 ounces (2 packages) Upton's Naturals Traditional or Chick Seitan
  • 1 tablespoon canola oil


  • 2 1/2 cups flour
  • 1/2 cup oats
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons lemon juice or apple cider vinegar
  • 2 cups non-dairy milk
  • 1/4 cup maple syrup
  • 2 tablespoons canola oil

Preheat oven to 400°F. Line a baking pan with parchment paper or foil and coat with a light layer of oil.

Combine non-dairy milk, apple cider vinegar, and cornstarch in a small bowl. Combine cornstarch, flour, breadcrumbs, and herbs and spices in another small bowl. Break the Seitan into bite-sized pieces.

Dip the Seitan in the milk mixture, then roll around in the bowl of flour. Place on the prepared baking sheet. Repeat with each piece. Bake for 15 mins, flip the pieces, and bake for another 15 minutes.

Heat the canola oil in a large frying pan over medium-high heat on the stovetop. Cook the Seitan for 4-5 minutes on each side until golden and crispy. Remove from heat and set aside.

To make waffles, combine the flour, oats, baking powder, baking soda, and salt in a large mixing bowl. Add the lemon juice or vinegar to the non-dairy milk and let sit for a minute. Create a well in the center of the dry ingredients and gradually mix in the milk and lemon juice or vinegar, maple syrup, and canola oil. Stir until just combined.

Cook in a waffle maker according to manufacturer's instructions.
