Salad:
- 4 cups cooked quinoa
- 1 10.6-ounce package Upton's Naturals Chili Lime Jackfruit
- 1 15 ounce can black beans
- 1/2 red onion, diced
- 1 medium tomato, diced
- 1 cup corn kernels
- 1 poblano pepper, diced
- 1/2 jalapeno pepper, diced
- 2 cloves garlic, minced
- 1 avocado, cut into 1-inch pieces
Dressing:
- Juice of 2 limes
- 2 tablespoon olive oil
- 1 teaspoons chili powder
- 1/2 teaspoon cumin
- 1 tablespoon agave nectar
- 1/4 teaspoon salt
- Chili sauce to taste, optional
directions
Mix together all of the salad ingredients in a large bowl. In a separate bowl, mix together all of the dressing ingredients. Pour dressing over the quinoa mixture and mix until thoroughly coated.
