Chili Lime Burgers with Thai Slaw and Peanut Sauce

  • 1 10.6-ounce package Upton’s Naturals Chili Lime Jackfruit
  • 1 1/2 cup panko (or other breadcrumbs)
  • 1/2 small onion, diced
  • 1 green onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons soy sauce
  • 3 tablespoons peanut butter
  • 1 tablespoon agave or maple syrup
  • 1-2 tablespoons chili sauce
  • Juice of 1/2 lime


Thai slaw:

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lime juice
  • 1 teaspoon chili sauce
  • 1 tablespoon soy sauce
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons agave
  • 2 teaspoons sesame oil
  • 3 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 2 tablespoons chopped cilantro
  • Freshly ground black pepper


Peanut sauce:

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • Juice of 1/2 lime
  • 1 teaspoon grated fresh ginger
  • 1/3-1/2 cup coconut milk
  • Chili sauce to taste
  • Freshly ground black pepper


  • 6 rolls or burger buns, toasted
Preheat oven to 375°F.

Mix together all of the burger ingredients and mash together with a potato masher until the mixture holds together. Add more panko if the mixture is too soft or liquid.

Form into 6 burgers and place on a prepared baking sheet. Bake for 25-30 minutes, or until the edges are crispy.

While the burgers are baking, make the slaw and peanut sauce. In a large bowl, mix together the apple cider vinegar, lime juice, chili sauce, soy sauce, ginger, agave, and sesame oil. Stir in the cabbage, carrots, green onions, and chopped cilantro. Salt and pepper to taste.

To make the peanut sauce, mix the peanut butter, soy sauce, lime juice, grated fresh ginger, and 1/3 cup coconut milk in a small bowl. Add more coconut milk to the sauce if you want a thinner sauce. Add chili sauce and black pepper to taste.

To assemble the burgers, spread peanut sauce on the bottom bun. Place a burger on the bun, add a spoonful of slaw, and top with the other half of the burger bun.
