Holiday "Leftovers" Sandwich

Everyone knows the best thing about a holiday meal is piling all of the leftovers on a dinner roll and making a messy, delicious leftovers sandwich. Now there's no need to wait for leftovers, because our Holiday Roast Slices in Gravy is ready to eat in as little as five minutes. 

This recipe comes from our Chicago cafe Liberation Kitchen, but feel free to swap in your favorite holiday sides and sauces to make this sandwich your own. 

Ingredient List

For the sandwich: 

  • 4 buns or rolls of your choice, or 8 slices of bread 
  • 4 oz cranberry aioli (recipe below) 
  • 1 package Upton's Naturals Holiday Roast Slices in Gravy
  • 12 oz mashed potatoes
  • 1 large bunch of kale
  • oil for pan
  • salt, pepper, lemon juice to taste 

For the cranberry aioli: 

  • Mix 1 cup cranberry sauce with 1/2 cup vegan mayo

Toast the buns on the stovetop or in a toaster. Heat the Holiday Roast Slices in Gravy according to package directions.

In the meantime, heat a bit of oil (optional) in a cast iron skillet and cook the kale until it's softened and crispy edges form. Add a squeeze of lemon juice, and a dash of salt and pepper if desired.

To assemble, smear cranberry aioli on each of the top buns. Divide other ingredients equally among each sandwich and stack from the bottom: mashed potatoes, Holiday Roast Slices in Gravy, and crispy kale.
