Ingredient List
  • 3-4 teaspoons olive oil, divided
  • 1/2 small onion, sliced into rings
  • 1 6.4-ounce package Upton’s Naturals Classic Burger (2 patties)
  • 2 slices or 1/2 cup vegan swiss or mozzarella cheese
  • 2 burger buns
  • 2 tablespoons vegan Russian or Thousand Island dressing
  • 2 leaves lettuce
  • 1/2 cup sauerkraut, drained
directions
Heat 2 teaspoons olive oil in a large skillet over very low heat and caramelize the onions, 15-20 minutes, stirring every so often.

Remove the onions, then pan fry the burger patties for 2-3 minutes on each side, adding more olive oil if needed. When you flip the burgers, top each patty with a slice or 1/4 cup cheese and melt, placing a lid over the skillet if necessary.

Toast the burger buns, then spread the dressing on both sides. Place a lettuce leaf on each of the bottom buns, top with the burgers, then pile on the caramelized onions and sauerkraut.
