Ingredient List
  • 1 bunch kale, washed and chopped into small pieces
  • Sprinkle of sea salt
  • 2 teaspoons olive oil
  • 1 red bell pepper, sliced
  • 1 medium tomato, chopped
  • 1/2 small onion, sliced
  • 1 large carrot, grated
  • 1 10.6-ounce package Upton’s Naturals Sweet and Smoky Jackfruit
  • 1/3 cup toasted pumpkin seeds

Dressing:

  • 2 teaspoons freshly grated ginger
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup or agave nectar
  • 3-4 teaspoons apple cider vinegar
  • Freshly ground black pepper
  • 1 tablespoon soy sauce
  • 3 tablespoons water
directions
Place the kale in a large bowl and sprinkle with sea salt, then drizzle in the olive oil. Massage the kale until tender, adding more salt or oil if needed to break down the fibrous greens.

Add the red bell pepper, tomato, onion, grated carrot, jackfruit, and pumpkin seeds.

Mix together the dressing ingredients, then taste and adjust seasonings if necessary. Dress the salad and serve immediately.
